When Holly began kindy this year I began to omit nuts from all of our raw food snacks and experiment with seeds instead so that she could take them to kindy with her.
I’ll admit, it took a while for us to get used to the nut-free rule, though I totally understand it.
These bars have turned into a favourite of Holly’s and are loved by her friends when they come over to our place as well.
Feel free to remove the popcorn and add an extra cup of sunflower seeds if you don’t eat corn. (We use organic popping corn in ours.)
2 cups of popped popcorn
1 cup shredded coconut
2/3 cup melted coconut oil
¼ cup raw cacao powder
1 cup dates
1 cup sunflower seeds
+ large pinch of sea salt.
Blend dates in a food processor until they’re diced finely. Melt coconut oil in a small saucepan and pour into processor along with sunflower seeds, salt and cacao. Blend/process until combined.
Place popped corn and coconut in a large bowl and stir through chocolate mixture until well combined.
Press into a baking paper lined tray and pop into the fridge until hard, then slice into bars.
Keep in the fridge until you need to put into lunch-boxes.
